Recipe: popovers with a tangy twist

A crisp exterior, airy on the inside, and a gooey center of goat cheese will leave everyone craving for more.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 1 1/4 cups milk (room temperature)
  • 1 tbsp warm melted salted butter
  • 2 ounces goat cheese (about one half jar, room temperature)

Directions

  1. Preparation: Begin by whisking together the flour, salt, eggs, milk, and melted butter until smooth. Let the mixture rest at room temperature for 15 minutes. Meanwhile, preheat your oven and place your popover or cupcake pans inside to get them piping hot.
  2. Assemble: Carefully remove the heated pan from the oven. Drop a small sliver of butter into each cup, filling them halfway with the batter. Nestle 1/2 tsp of creamy goat cheese right in the center of each cup for a surprise burst of flavor
  3. Bake to Perfection: Slide the pans into the oven without peeking! The secret to sky-high popovers is a consistent temperature, so no peeking.
  4. Serve Warm: Enjoy your popovers straight from the oven, ideally with a comforting bowl of soup.
