Honey Chipotle Cornbread with Farmhouse Cheese
A lightly sweet, moist, cornbread with a crisp golden crust- perfect for a 6-8" cast iron skillet!
Ingredients:
- 3/4 cup cornmeal
- 1/2 all purpose flour (a gluten free 1:1 works great!)
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 large egg
- 2 Tbsp honey
- 2 Tbsp melting butter (plus 1 tbsp for the pan)
Instructions:
Preheat & Grease! Place your skillet in the oven and preheat to 400 degree. Once hot, removed and swirl 1 tbsp butter in the pan.
In a bowl, whisk together all the dry ingredients: cornmeal, flour, baking powder, and salt. In another bowl, whisk milk, egg, and honey until combined.
Stir wet ingredients into the dry mixture until just combined (don't overmix). Crumble a package of Fraga Farm Chipotle Farmhouse cheese and fold it into the batter.
Pour the batter into the hot skillet and bake for 15-18 minutes until golden brown and a toothpick comes out clean. Enjoy warm with butter, jam, or a bowl of chili!
