Roasted Strawberries with Whipped Chevre

 Ingredients

For the Roasted Strawberries:

  • 1 lb fresh strawberries, hulled and quartered

  • 2 tbsp honey (divided)

  • 1 tbsp balsamic vinegar

For the Whipped Chevre:

  • 1 jar Fraga Farm Chevre 

  • 1/4 cup full fat yogurt
  • 1 tbsp honey

  • 1 tbsp lemon juice

Instructions

1. Roast the Strawberries

  • Preheat oven to 300ºF (150ºC).

  • In a mixing bowl, combine 1 tbsp honey and 1 tbsp balsamic vinegar.

  • Add strawberries and toss to coat.

  • Spread in a single layer on a parchment-lined baking sheet.

  • Roast for 30 minutes, or until soft and syrupy.

2. Whip the Chevre

  • In a bowl or stand mixer, combine Fraga Farm Chevre, 1 tbsp honey, and 1 tbsp lemon juice.

  • Whip by hand or with a mixer until smooth, fluffy, and spreadable (about 2–3 minutes).

3. Serve

  • Spoon whipped chevre into serving dishes or a shallow bowl.

  • Top with warm roasted strawberries.

  • Optional: Finish with an extra drizzle of balsamic.


Tips

  • Serve with toasted baguette slices or crackers for a savory version.

  • Add fresh basil or mint for herb-iness 

  • Can be made ahead; rewarm strawberries before serving.
