Tender greens, Fraga Farm cheeses, and aromatic spices wrapped in crispy rice paper and baked into golden spirals.

Filling Ingredients

1 tsp olive oil

4 green onions, chopped (white + green parts)

1 large bunch winter spinach, finely chopped (about 400 g)
- Nettle works great here too! Include the tender stems.

1" knob fresh ginger, finely chopped

5 garlic cloves, finely chopped

¼ tsp salt (adjust to taste)

2 oz Fraga Farm Goatzerella, grated

2 oz Fraga Farm Feta, crumbled

1 egg
*Filling can be adjusted to taste, For example: try sautéed mushrooms, leeks, carrots, and other vegetables!*
For Assembly

2 eggs

1 tbsp olive oil or melted butter

6 rice paper wrappers (8.5 inch / 22 cm)

Instructions
1. Make the Filling

Heat 1 tsp olive oil in a large pan over medium heat.

Add chopped green onions and sauté 2–3 minutes until softened.

Add chopped spinach in batches, cooking until wilted (about 4–5 minutes total).

Lightly salt and let cool slightly.

In a bowl, mix spinach mixture with Goatazerella, Feta, and 1 egg. Stir until well combined.
2. Prepare the Egg Wash

In a shallow dish, whisk 2 eggs with 1 tbsp olive oil or melted butter until smooth. Set aside.
3. Assemble the Swirl Pockets

For each pocket, dip 2 rice paper wrappers in egg wash until soft.

Gently remove excess moisture with your hands.

Lay wrappers side by side on a lightly oiled or damp surface, overlapping ~1 inch in the center to form a figure 8.

Spoon about 1/3 cup of filling lengthwise along the middle of the wrappers.

Roll the bottom edge up and over the filling, then continue rolling into a tight log.

Carefully spiral the log into a cinnamon-roll shape and place into a greased baking dish.

Repeat for remaining wrappers and filling.
*The rice paper will seem initially impossible to shape but will quickly become soft and pliable and will seal nicely just from folding over the edge.*
Bake

Preheat oven to 400ºF (200ºC).

Lightly spray swirls with olive oil.

Bake for 30–35 minutes, or until golden brown and crisp.
To Serve
Serve hot as an appetizer, light meal, or side. Best enjoyed fresh from the oven. When store in the fridge, the pies lose their crisp but are still delicious!
