The 3 Minute Feta Soufflé

This is a quick, protein-rich dish that works well for breakfast or a light meal. It’s made using an 8oz wide-mouth mason jar (like our chevre jars!) or similar mug and a microwave.

·       Ingredients:
·       2 eggs
·       2 tbsp cold water
·       1 oz feta (about a 1” cube), crumbled
·       1 tbsp chopped chives (about 5 sprigs)
·       Black pepper
·       Butter or oil for greasing

Instructions:

  1. Grease the jar. 
  2. Beat the eggs with cold water until slightly foamy.
  3. Stir in chives, feta, and black pepper.
  4. Microwave for 30 seconds. Stir once to redistribute ingredients.
  5. Microwave another 45–60 seconds, until puffed and cooked through with visible air pockets at the bottom.
  6. Cover with a dish towel and let rest for 1 minute to finish cooking with the residual heat.
  7. Serve as-is or with:

·       Sautéed cherry tomatoes: halve a handful, cook in olive oil for 2–3 minutes, and finish with a splash of balsamic

·       Optional additions: cucumber slices or olives for a more Mediterranean plate
